How in the world do you get the icing so smooth on the top of the cupcakes?? I make the wilton icing, which is great for using tips, but can;t seem to get it smooth. Is there a trick??!!?? Do you melt it? Stomp on it with a heavy book?!??! HELP!! =]

Hi Michelle, Are you talking about the buttercream icing? If you are I basically use a large round tip (Wilton 1A) and pipe a swirl then I press down the fondant topper on top.

Hope this helps.

Thanks for the tip!

For those cupcakes that don't have a large fondant topper to "smush" the icing, do you have any pointers? I'm planning to ice the cupcakes, then add some small fondant flowers that I will cut out, but they won't take up the entire top of the cupcake.

Hi Michelle,

When I decorate with flowers on a swirl of icing, I usually place the flower either on top or on the side but do it soon after piping as some icing sets really quick and you dont want a cracked look to your swirls. I have made this mistake many times when icing and decorating large quantities but now I try and do them in groups eg. 12 at a time.

Good Luck!
